This recipe will make twelve servings of the egg muffins, so plan accordingly if you need to size up or down. Here are all the ingredients you will need:

  • Twelve slices of turkey bacon, pre-cooked and sliced into thirds
  • 3/4 cups of Swiss and Monterey Jack cheese, low fat and shredded
  • 1/2 cups of 1% milk
  • 1/4 teaspoons of low sodium salt
  • 1/4 teaspoons of pepper
  • 1/4 teaspoons of Italian seasonings

And here are the directions for these egg muffins:

  • You will need a muffin tin. Spray it with cooking spray to prevent the muffins from sticking to the tin later on. Preheat the oven to 350F.
  • Each muffin cup will need at least three pieces of turkey bacon at the bottom of the cups. Set muffin tin aside for a moment.
  • In a large mixing bowl, mix together all of the ingredients except for 1/4 cup of the blended and shredded cheese. Make sure it is all well mixed together and then pour mixture into the muffin cups with 1/4 cups of the mixture each.
