Everyone loves mac-n-cheese, but not everyone loves all the carbs. This easy, low carb cauliflower mac-n-cheese recipe is sure to become your new go-to for cheesy deliciousness comfort food! You’ll never miss those starchy macaroni noodles again.

Ingredients:

½ head cauliflower

1Tbsp butter

¾ cup heavy whipping cream

2 oz cream cheese

1 tsp garlic powder

1 tsp Italian herbs

1 tsp Dijon mustard

1 cup shredded cheddar cheese (plus a little extra for topping)

½ cup shredded mozzarella cheese

½ cup almond milk

Salt & Pepper to taste

2-3 slices uncooked bacon

Directions:

Cut the cauliflower into florets and steam for 7 minutes – drain fully (cauliflower holds a lot of water).

In a separate pan, heat 1 TBSP butter on medium heat. Add the heavy whipping cream, cream cheese, garlic powder, Italian herbs and mix everything well.

Once everything is blended together, add the Dijon mustard, the cheddar and mozzarella cheese and again mix everything until the cheese melts and becomes a smooth consistency.

Then, add the almond milk and stir, add salt to taste and freshly ground pepper – Keep mixing!

Then stir in the cooked and drained cauliflower florets and keep cooking 1-3 more minutes.

Pour everything in a glass baking dish, sprinkle the top with some chopped, uncooked bacon and extra cheese, then Bake at 350 degrees for 15 mins.

Let cool slightly, then serve in a bowl and enjoy this delicious, low carb cauliflower mac-n-cheese.
