If you’re in the mood for something that is filling, diet friendly, and a little different from your average dish, then you need to try out this chicken and pineapple quesadillas recipe –Yes, you read that right!
Chicken and pineapple are both the two main ingredients in this dish and you’ll be surprised by just how tasty this dish can be.
Another surprising thing about this recipe in particular is that it’s completely diet friendly with other ingredients including hearty black beans and fresh cilantro. The calorie count is much better than compared to a quesadilla at Chipotle as well and this recipe is very inexpensive to make too. Also, these are incredibly easy to make.
Here are all the ingredients you will need.
- 3/4 pounds of chicken breast
- One 15 oz. can of pineapple chunks
- One 15 oz. can of black beans
- 3 fresh green onions
- 1/4 bunch of cilantro
- 1/2 teaspoon of cumin
- 1/4 teaspoons of red pepper flakes
- 1/4 teaspoon of salt
- Two cups of shredded Monterey jack and mozzarella
- Eight flour tortillas
And here’s how to make these exciting and yummy quesadillas:
- Cook the chicken until a golden brown color on outside and let cool.
- Drain pineapple chunks then start cutting the chunks into smaller pieces. Next rinse and drain the black beans as well. Start chopping the cilantro and slice the onions. Now combine the black beans, pineapple, cilantro, green onions, salt, red pepper flakes, cumin, and shredded cheese into a single large bowl. Stir together.
- Now chop the chicken into smaller chunks and add the chicken to the rest of the ingredients in the large bowl. Stir.
- Spread about 1/4 of the filling on tortilla and fold over. Cook the quesadilla in a skillet on medium heat until a golden brown or use a quesadilla or sandwich press to achieve same results.
