You’ve probably been hearing the word “chaffle” a lot lately. So, what exactly is a Chaffle? It’s a cheese waffle!!! You can add any toppings or mix-in’s you can imagine or just have a plain chaffle. Today, we’re making easy pepperoni pizza chaffles that are keto friendly, low carb and super crispy and delicious. These chaffles are perfect for an after school snack that the kids (and YOU) will want all the time. Give em a try and let us know how they turned out. Ingredients:

Mini Dash Waffle Maker (If you don’t have one, get one HERE – You will Love it!)

1 cup low moisture mozzarella cheese or dry aged white cheddar

1 egg

1 ounce pepperoni (diced)

1 tsp baking powder

2 TBSP almond flour

Garlic powder, Italian seasoning, red pepper flakes (optional ingredients)

Pizza sauce or Ranch for dipping (optional)

Directions:

Pre-heat waffle maker.

Mix baking powder and almond flour into the cheese.

Add egg and mix well.

Add any additional toppings into the mixture (ex: pepperoni, ham, finely diced veggies, herbs, additional seasoning, etc.)

Mix together to incorporate evenly into the mixture.

Spread about 1/4 cup of mixture for each chaffle evenly on the bottom of the waffle maker and close the lid to cook.

Let it cook 1-2 minutes. (Steam indicates it’s still cooking).

Carefully flip over and cook an additional minute or so until desired crispness.

Place on a baking rack to cool and repeat steps above for the remainder of the mixture.

Once all the pepperoni pizza keto chaffles are made, serve with any dipping sauce of your choice (or plain) and ENJOY!!!
