Goulash, is a soup or stew of meat and vegetables seasoned with paprika and other spices. The traditional Goulash is typically made using macaroni noodles and potatoes. Try this Keto Goulash Soup recipe for a hearty, satisfying meal.

Ingredients:

8 oz Celery – chopped

1 Red Bell Pepper – chopped

1 Onion – chopped

5 Garlic Cloves – finely chopped

2 tomatoes – chopped

1 lb Ground Beef

½ tsp Red Pepper Flakes

1 TBSP Oregano

2 tsp Salt

½ tsp Black Pepper

1 TBSP Smoked Paprika Powder

1 TBSP Tomato Paste

1 2/3 cup Water

2 tsp Red Wine Vinegar

Heat pan on medium heat with a drizzle of olive oil. Sautee onion and garlic for a few minutes. Then add the ground beef and stir occasionally until cooked through. (drain the beef fat, if desired).

Add the chopped bell peppers, celery, all dry seasonings and mix together well.

Add the chopped tomatoes, tomato paste and 2/3 cup water and stir well again.

Lower heat and simmer for about 15 minutes.

Add 1 cup water, red wine vinegar and heat on high another 2 minutes.

Ready to serve when hot, add low-fat sour cream and finely chopped parsley for garnish.
