For a keto friendly take on the McGriddle sandwich, try this copy-cat recipe for a lower-carb option.

Muffin Ingredients:

1 cup almond flour

2 tsp baking powder

2 oz cream cheese

2 large eggs

1 tsp vanilla extract

1 tsp maple extract

½ tsp liquid stevia

In blender, pulse above ingredients until smooth. Pour mixture evenly into muffin tins. Add a dash of maple syrup to each tin and spread around the top.  Bake for 15 minutes at 350 degrees or until set.

Topping Ingredients:

3 eggs

Salt & Pepper

Cooked Sausage, Ham or Bacon (whatever variety you like)

Cheese (any kind, shredded or sliced)

In a separate bowl, beat 3 eggs with salt and pepper. Pour into a square baking dish and bake for about 10-15 minutes or until your desired done-ness. Cut into 4 squares. Alternately, pour the eggs into the same tins you used for the muffins, to make individual egg patties.

Assemble your McGriddle using the egg, bacon or ham or sausage, and cheese if you’d like. For a smaller portion, cut the muffins in half first then assemble accordingly.
