It might sound like an odd combination–juicy watermelon with crumbled feta cheese–but it actually works very well for this light and tasty salad. All the ingredients included in this recipe, from the leafy arugula to the kosher salt and pepper that gives this salad a refreshing and complimentary taste, are low in calories (only about 157) and perfect for anyone who wants to stay on top of their diet. Plus, there are only three steps!
Here are the ingredients you will need. This recipe will make enough for four servings, so plan accordingly if you want to just make a snack or a whole meal.
- Three cups of fresh watermelon, seedless and cubed
- 1/2 cups of crumbled feta
- Seven ounces of fresh arugula
- 1/4 red onion, small and sliced thin
- Two tablespoons of balsamic vinegar
- Two tablespoons of extra virgin olive oil
- Dashes of kosher salt and pepper
And here are the directions to make the watermelon feta salad.
- You will want to wash your arugula in cold water and make sure it is completely dry afterward by patting it gently.
- Next, in a large mixing bowl, put together the vinegar, olive oil, salt and pepper and then add in the rest of the ingredients and begin to toss in bowl until everything is coated by the dressing.
