  • 8 ounces of whole-wheat lasagna noodles
  • 3 tablespoons of olive oil ,extra-virgin
  • 3 large sweet onions
  • 4 medium diced Portobello mushrooms
  • 1/2 cup of red wine
  • 1 teaspoon of low sodium salt
  • A bit of ground pepper
  • 4 cups of spinach
  • 2 cups of ricotta cheese,non-fat
  • 1/2 cup of basil freshly, chopped
  • 1/2 teaspoon of salt
  • 2 tablespoons of olive oil , extra virgin
  • 3 tablespoons of flour
  • 2 cups of milk , low-fat
  • 1/2 teaspoon of salt
  • 2 ounces of Gorgonzola cheese,crumbled
  • 1/3 walnuts chopped
  • 1/4 cup of basil chopped

Here are the directions:

  • Boil water and cook the noodles for about two minutes and drain, returning the noodles to the pot with cool water.
  • Heat 3 tablespoons of oil over medium heat in skillet. Add onions and stir for 25 minutes. Add mushrooms and cook for three minutes. Add red wine and one teaspoon of salt until wine is absorbed. Remove from heat.
  • Take the spinach, ricotta cheese, and 1/2 teaspoon of salt and use a food processor to process until completely smooth.
  • Heat two tablespoons of oil in medium heat in a saucepan. Add flour and stir for about 30 seconds. Whisk in the milk and dash of salt, bringing to a boil. Keep whisking for about one minute. Add the Gorgonzola and whisk until melted. Remove from heat.
  • Preheat the oven to 375, coat baking pan with any kind of cooking spray. Drain the noodles and then spread out 1/2 white sauce in the pan and then put a layer of noodles on it. Spread about half of the spinach filling over noodles and top about one third with onion filling. Repeat. Bake for about 30 minutes.
