Cold weather is upon us and there’s nothing better than staying in for the night and warming up your insides with a delicious and hearty bowl of soup. This simple tomato soup recipe only takes about 10 minutes to make and the aroma will be sure to bring back the nostalgia of when your mom (or grandma) used to make it. Pair it with a melty grilled cheese sandwich on low-carb bread and it is sure to become one of your go-to favorites.

Ingredients:

1 can (412g) Peeled Tomatoes (Italian)

5 Garlic Cloves (minced)

2 TB Olive Oil

2 Cups Chicken or Vegetable Broth

1 TB Italian Herbs

¼ tsp Black Pepper

½ tsp Salt

2 TB Sour Cream

Instructions:

Empty can of tomatoes, garlic, and olive oil in a blender. Puree until smooth.

Pour the puree into a pot.

Add Broth, Italian herbs, salt and pepper and heat to boiling.

Add sour cream and mix together.

Simmer until your desired consistency.

Serve in a bowl and ENJOY!
