With the holidays comes lots of yummy and fatty foods. Instead of waiting until the New Year or cheating on your current diet, you can still maintain healthy eating habits all throughout the holidays. The biggest culprit, Thanksgiving, is coming up and there are recipes out there that are low fat. In fact, try this golden glazed turkey breast with a delicious fruit stuffing.

This is a recipe that the entire family will love with its different levels of taste, starting with a juicy turkey and then ending with high notes of sweet and diet friendly fruit. This entire meal is 346 calories, compared at other turkey dinners that can be closer to 600 calories!

There are a couple steps involved in this turkey dinner as well as ingredients for each step. Here is the full list:

  • 1-5 pound turkey breast, thawed
  • Two tablespoons rosemary, chopped
  • Two tablespoons thyme leaves, chopped
  • Two tablespoons olive oil
  • One small thinly sliced onion
  • One apple, peeled and thinly sliced
  • One pear, peeled and thinly sliced
  • 1/4 cup dried cranberries or raisins
  • Two cups apple juice
  • One tablespoon brown sugar
  • One tablespoon brown mustard
  • One tablespoon olive oil

Preheat the oven to 325F. Place turkey into roasting pan. Take a small bowl and combine herbs and olive oil together, creating a paste. Put this paste between the skin and meat of the turkey. Put the remaining paste on top of the skin. Then, taking the fruit and sliced onions, mix them together in another small bowl and also place them between the turkey skin and meat.

Pour the apple juice into the bottom of the turkey roasting pan. Then, roast the turkey for about 1 to 2 hours. The meat should be at approximately 165F to be cooked thoroughly.

Take the rest of the apple juice, brown mustard, brown sugar, and olive oil in a sauce pan. Heat stove to a boil and then let it simmer until the mixture is thickened. This will be used as a baste for the turkey during the last 30 minutes of cooking.
