Our friend and food PR diva Melinda Morgan Kartsonis shared her Greek Hummus Appetizer Recipe and, after making it, we had to share! Not only is it quick and easy to make; it\u2019s also budget-friendly and includes a healthy hummus recipe, which you can customize to your tongue\u2019s desire.<\/span><\/span><\/p>\n

Use this Greek Hummus & Veggie Platter as an appetizer for your next dinner party, as a main course for your next dinner, or use it to replace the salad course the next time you host friends and family. But no matter what you do, remember one thing: it\u2019s light, healthy, fresh, and will enable you to indulge without feeling guilty about it! Yum!<\/span><\/span><\/p>\n

Ingredients for Greek Hummus Appetizer:<\/b><\/span><\/span><\/p>\n

1-2 cups hummus<\/span><\/span><\/p>\n

1 cup greens, chopped (cabbage, spinach, kale, lettuce, or a combination)<\/span><\/span><\/p>\n

\u00bd cup tomato, chopped<\/span><\/span><\/p>\n

\u00bd cup cucumber, chopped<\/span><\/span><\/p>\n

2 Tablespoons red onion, chopped<\/span><\/span><\/p>\n

\u00bd cup reduced fat crumbled feta cheese<\/span><\/span><\/p>\n

4 Tablespoons kalamata olives<\/span><\/span><\/p>\n

\u00a0<\/span><\/span><\/p>\n

Directions for Greek Hummus Appetizer:<\/b><\/span><\/span><\/p>\n

On a medium-large platter:<\/span><\/span><\/p>\n

1.\u00a0\u00a0\u00a0 <\/span>Spread the hummus as your base.<\/span><\/span><\/span><\/p>\n

2.\u00a0\u00a0\u00a0 <\/span>Sprinkle these on top, in order: greens, tomato, cucumber, red onion, crumbled feta cheese, and kalamata olives.<\/span><\/span><\/span><\/p>\n

3.\u00a0\u00a0\u00a0 <\/span>Enjoy! (That\u2019s it\u2026 Seriously. SO easy and delicious!!)<\/span><\/span><\/span><\/p>\n

Ingredients for Hummus:<\/b><\/span><\/span><\/p>\n

4 cloves garlic<\/span><\/span><\/p>\n

2 cups canned chickpeas<\/span><\/span><\/p>\n

1 \u00bd tsp. salt (pref. sea salt)<\/span><\/span><\/p>\n

1\/3 cup tahini<\/span><\/span><\/p>\n

6 Tablespoons lemon juice, freshly squeezed<\/span><\/span><\/p>\n

4 Tablespoons water (optional)<\/span><\/span><\/p>\n

8 dashes hot sauce (Sriracha or Tabasco)<\/span><\/span><\/p>\n

Directions for Hummus:<\/b><\/span><\/span><\/p>\n

1.\u00a0\u00a0\u00a0 <\/span>Add garlic cloves to food processor and chop until fine.<\/span><\/span><\/span><\/p>\n

2.\u00a0\u00a0\u00a0 <\/span>Add chickpeas, sea salt, tahini and lemon juice. Add water until you reach your desired consistency.<\/span><\/span><\/span><\/p>\n

3.\u00a0\u00a0\u00a0 <\/span>Add hot sauce to taste.<\/span><\/span><\/span><\/p>\n
